Though bone broth has seen a huge surge in popularity in recent years, it has been around since prehistoric times. Broth was a common part of the diet of early humans as a way to get nutrients from inedible or inaccessible parts of animals.

Bone broth is made by slowly simmering animal bones and connective tissue in water. This process draws the beneficial compounds out of the bones, marrow, tendons, and ligaments and puts them into the broth, making the abundance of nutrients easy to consume and absorb.

WHAT'S THE DIFFERENCE BETWEEN STOCK, BROTH AND BONE BROTH?

The terms stock and broth are often used interchangeably, but there is a difference.

Stock is made from simmering bones with vegetables in water, with minimal to no seasoning. It is cooked very slowly. Stock congeals when cooled due to the gelatin content.

Broth is made by simmering meat, without bones, and vegetables in water. It contains seasoning and is cooked relatively quickly. Broth does not congeal when cooled because it does not contain gelatin.

Finally, bone broth is more like stock despite its name. It is made my simmering bones with vegetables in water, with minimal to no seasoning. But because it is cooked even longer than stock. It also congeals when cooled due to the gelatin content.

So which is the best?
