    Ripe apples are picked, washed and dried. Then, the apples are pressed to extract the juice from the pulp.

    The fermentation process for making apple cider vinegar from apple juice involves two steps. In the first step, yeast is used to transform the natural sugars in apple juice into alcohol. The yeast consumes the sugars in the juice and produces alcohol as a byproduct, mainly in the form of ethanol.

    Once the alcoholic fermentation is complete, the next step is acetification. Acetobacter, a type of bacteria, is added to convert the alcohol into acetic acid. This is what turns the mixture into vinegar and what gives ACV its sour smell and flavor.
